Pineapple Coconut Bars

1/2 cup Butter -- softened
1/4 cup Brown sugar -- packed
1 1/4 cups Flour
1/2 teaspoon Baking powder
1/4 teaspoon Salt
2 Eggs
1 cup Brown sugar -- packed
1 cup Unblanched almonds -- chopped
1 cup Flaked coconut
1/4 cup Crushed pineapple -- undrained
Powdered sugar (opt)
Recipe
In bowl, mix the butter with 1/4 cup brown sugar and 1 cup flour until mix is crumbly. Press into a lightly greased 9" square pan. Bake at 350~ for 10 minutes. Meanwhile, combine the remaining 1/4 cup flour with the baking powder and salt. In bowl, beat the eggs until fluffy. Blend in the 1 cup brown sugar, flour mix, almonds, coconut and pineapple. Spread over baked crust. Return to oven. Bake 25-30 minutes until topping is golden and set. Cut into bars while still warm. Dust with powdered sugar if desired.
