    1 (32 ounce) jar sauerkraut, rinsed and drained
    1 cup Russian dressing (sometimes I use 1000 Island)
    6 skinless, boneless chicken breasts
    1 tbsp yellow mustard
    1 cup shredded Swiss cheese

    Place half the sauerkraut in a 3-5 quart crockpot. Drizzle on about 1/3 cup of the dressing, top with 3 chicken breasts and spread the mustard over the chicken breasts. Top with the remaining sauerkraut and chicken breasts, pour the remaining dressing over the casserole. Cover and cook on Low for 4 hours. To serve: spoon the casserole onto serving plates and sprinkle with shredded Swiss, drizzle on extra dressing if desired.
