3 lbs beef boneless chuck roast
1 t salt
1 T dried Italian seasoning
1 lg clove garlic finely chopped
1/3 c oil-packed sun-dried tomatoes, drained and chopped
1/2 c sliced pitted Kalamata or ripe olives
1/2 c beef broth
1/2 c frozen pearl onions (from 16 oz bag)
Recipe
Spray 12" skillet with cooking spray; cook beef in skillet about 5 min, turning once till brown. Sprinkle with salt, Italian seasoning and garlic; remove from skillet.
Put beef, seasoned side up, in slow cooker. Spread tomatoes and olives over roast. Add broth and onions.
Cover and cook on low heat setting 5-6 hrs or till tender.
Remove beef from cooker; cover and let stand 15 minutes. Slice and serve with beef juice and onions.
8-10 servings.
