    1 lb. ground round or very lean hamburger
    1 can enchilada sauce (16 oz.)
    1 can corn, drained (16 oz.)
    1 small can olives, drained
    8 corn tortillas
    3/4 lb. grated sharp cheddar
    1 small onion, diced
    1 can chili beans (16 oz.)

    Cook meat and onion, drain well. Oil crockpot and put a tortilla on the bottom. Put some meat and about 1-inch of enchilada sauce on it. Put on another tortilla, then cheese, chili beans, corn, and sliced olives. Repeat layers till everything is used up, end with cheese on top.

    Cook on high 2-3 hours or on low for longer. Serve with lots of sour cream. This is also good without the meat but with more beans.
