Almond Coffee Roll

3 egg whites
1/4 teaspoon cream of tartar
3/4 cup sugar
3 egg yolks
1/2 teaspoon vanilla
1-1/2 teaspoons instant coffee powder
1 cup sifted all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
Sifted confectioners' sugar
Whipped Cream

Recipe
Place egg whites and cream of tartar in large bowl; beat until soft peaks form. Gradually add 1/4 cup sugar, beating until stiff peaks form.
Place egg yolks in another bowl; beat until thick. Gradually add remaining sugar to yolks and beat until very thick; beat in vanilla.
Dissolve coffee in 1/2 cup water.
Sift flour, baking powder, and salt together; add to yolk mixture alternately with coffee, mixing well after each addition. Fold into whites, a fourth at a time, blend well.
Spread batter in greased and floured 15-1/2 x 10-1/2-inch pan. Bake at 375 degrees until done, about 12 minutes.
Loosen sides; turn out onto towel sprinkled with sifted confectioners' sugar. Starting at narrow end, roll cake and towel together; let cool on rack. Unroll, fill with whipped cream and almonds. Roll up.
