Apple Nut Cake with Cinnamon Spice Glaze

Cake:
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1 whole egg
3 egg whites
1 1/2 cups sugar
1/2 cup canola oil or other oil
3/4 cup buttermilk
1 teaspoon vanilla
2 large, tart apples, cored and grated on the large
holes of a cheese shredder
1/4 cup chopped nuts, such as pecans or walnuts
GLAZE
1 cup powdered sugar
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
2 tablespoons skim milk
Recipe
For the cake:
Heat oven to 350 degrees. Lightly coat two 9-inch loaf pans with non-stick cooking spray. Dust with flour, tapping pan to remove excess flour. Set aside. In a medium-size bowl, combine the flour, baking soda, salt, and spices. Set aside. In the bowl of an electric mixer, beat together the egg, egg whites, sugar, oil, buttermilk, and vanilla until the sugar dissolves. Add the flour mixture and beat on low speed for 30 seconds. Beat on high speed for 30 seconds longer, until no streaks of flour appear. Stir in the apples and nuts by hand. Pour into pans and bake 45 to 50 minutes, or until a pick inserted in the center comes out clean. Cool 15 minutes on a rack. Unmold from pans and allow to cool completely.
For the glaze:
In a small bowl, combine all ingredients. Whisk to make a medium-thick glaze. Drizzle over loaves and allow to set, about 30 minutes to 1 hour.
Makes 2 loaves or 24 servings.
