    Berry Orange Poppy Seed Shortcake

    Shortcake
    2 1/2 cups biscuit mix
    1/2 cup half and half
    1 T. sugar
    3 T. melted butter
    1 tsp. orange zest
    1 T. poppy seeds

    Mix the biscuit mix, half and half, sugar, butter, orange zest and poppy seeds in a bowl and stir until blended, but not overly mixed. Drop dough by 6 spoonfuls on baking sheet lined with parchment or Silpat. Bake in preheated 425 degree oven for 10-12 minutes until golden brown. Cool. Slit open horizontally and place fruit on the bottom half, whipping cream, top with other piece of shortcake, more whipping cream, an orange slice and mint sprigs. Serves 6.

    Fruit Mixture
    1 pint strawberries, hulled and sliced
    1 pint raspberries
    1 pint black berries
    1/4 cup sugar
    2 T. orange juice or 2 T. orange liqueur such as Cointreau or Triple Sec

    Combine all ingredients in a bowl and mix well; can be made several hours ahead then refrigerated until ready to serve. Serve over shortcakes with whipped cream, orange slice and a mint sprig.
    Serves 6.
