    CRUMB CRUST:
    3 1/2 oz butter
    6 oz biscuits

    FILLING:
    4oz cream cheese
    1/4 cup sugar (caster)
    2 tbs lemon juice
    2 x eggs
    10 fluid oz cream
    9oz blackberries, fresh
    2 x passion fruit

    Recipe



    Prepare crust:
    Melt butter. Crush biscuits fine.
    Combine butter and biscuit crumbs, mix well. Press evenly over base and side of 10" flan tin; bake at 350f 10 minutes; allow to cool.

    Filling:
    Beat cheese, sugar and lemon juice with an electric mixer until smooth, beat in eggs one at a time. Add cream and beat until combined.

    Stir blackberries and passion fruit pulp together and spread onto base of baked crust. Top with filling and bake at 350f for 30 minutes or until set. Cool and refrigerate until cold.

    Serve with whipped cream and extra blackberries.
    Serves 4-6.
