    12 large egg whites
    2 cups firmly packed brown sugar, divided
    1 1/4 cups sifted cake flour
    1 1/2 teaspoons cream of tartar
    1 teaspoon salt
    2 teaspoon vanilla extract
    Sifted powdered sugar

    Recipe



    1. Preheat the oven to 350o. Set egg whites at room temperature for 15 minutes. Meanwhile, sift 1 cup brown sugar and the cake flour together into a small bowl; set aside.

    2. Beat egg whites in a large mixing bowl until foamy. Add cream of tartar and salt; beat until soft peaks form. Add remaining 1 cup brown sugar, 2 tablespoons at a time, beating until stiff peaks form and brown sugar dissolves.

    3. Sift flour mixture over egg whites, 1/4 cup at a time, folding in after each addition. Fold in vanilla. Spoon batter into an ungreased 10" tube pan. Break air pockets by cutting through batter wit a knife.

    4. Bake on lower shelf in oven at 350o for 50 minutes or until cake springs back when lightly touched. Remove cake from oven; invert pan onto a long, thin necked bottle and let cool completely. Loosen cake from pan using a narrow metal spatula; remove cake from pan. Sprinkle top with powdered sugar.
