Chocolate Chip Whipped Cream Loaf

1 1/2 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whipping cream
2 eggs
1 teaspoon vanilla
1/2 cup mini real semi-sweet chocolate chips
Topping
Fresh fruit, if desired
Recipe
Heat oven to 350°F. Grease and flour 9x5-inch loaf pan; set aside. Combine flour, sugar, baking powder and salt in medium bowl; set aside. Beat chilled whipping cream in chilled large bowl at high speed until soft peaks form (2 to 3 minutes). Add eggs and vanilla; continue beating just until blended (about 30 seconds). Gently stir in flour mixture and chocolate chips by hand until blended.
Pour batter into prepared pan. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Run knife around edges of pan to loosen; turn out onto cooling rack. Cool completely.
To serve, cut cake into slices; serve with fresh fruit, if desired.
VARIATION: Omit chocolate chips. Substitute 1/2 cup chopped walnuts, 1 teaspoon freshly grated lemon peel or 1 teaspoon freshly grated orange peel with flour mixture.
