    Cinnamon and Carrot Cake

    ½ lb wholemeal flour
    1 tbsp cinnamon
    1 tsp nutmeg
    ½ tbsp baking powder
    4 oz butter or marg
    4 oz honey
    4 oz sugar
    ½ lb carrots, peeled and grated finely

    Recipe




    Preheat the oven to 170 C Gas 3.

    Mix together the flour, spices and baking powder in a large bowl.

    Melt the butter, honey and sugar together in a saucepan and stir his mixture into the flour, combining thoroughly. Stir in the grated carrots.

    Put the mixture into a well grased 1 lb loaf tin and bake for 60-80 minutes until it feels firm to the touch and a skewer inserted into the centre comes out clean. Leave the cake in the tin for 10 minutes then turn on to a cooling rack.
