Cool Mint Cookie Pie

1/2 cup nonfat dry milk
1/2 cup iced water
2 egg whites
1 teaspoon lemon juice
1/4 cup sugar
1/4 teaspoon peppermint extract
5 drops green food coloring
1/3 cup small pastel pillow mints
1 chocolate wager, finely crushed
Recipe
With an electric mixer, beat dry milk, water and egg whites on high speed 3 minutes. Beat in lemon juice on high speed for an additional minute. Beat in sugar, 1 tablespoon at a time. Continue to beat until mixture is thick and fluffy, about 2 minutes. You do not want to over-beat it. Beat in extract and food color just until well mixed (15 seconds or so).
Fold in mints and pour into an un-greased 9-inch pie plate. Sprinkle with wafer crumbs.
Freeze uncovered until firm, about 1 hour.
Makes approx. 8 servings with each serving having less that 100 calories.
