    1 1/2 cups currants
    1 lb butter or margarine
    2 cups sugar
    1 tsp mace
    9 eggs, separated
    4 1/4 cups flour, sifted
    1 tsp lemon extract
    1 tsp vanilla

    Recipe



    1. Rinse currants in hot water, drain, and dry on a towel.

    2. Cream butter until fluffy; add sugar and spice, and cream thoroughly.

    3. Beat egg yolks until thick and creamy; add to butter mixture and blend well.

    4. Add one half of the flour and mix until smooth; add remainder of flour and mix until smooth again.

    5. Mix in stiffly beaten egg whites.

    6. Pour into 2 paper-lined loaf pans (9x4x2.5) and bake at 350 degrees for 1 hr and 25 min.

    7. Test for doneness by inserting a toothpick in center.
