Eggless Spice Cake

1½ sticks butter
1½ cups sugar
3 cups sifted cake flour
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cloves
1½ cups buttermilk, at room temperature
1½ teaspoons baking soda
1½ cups chopped pecans
1½ cups raisins
Penuche Frosting:
1 cup brown sugar
¼ cup milk
3 tablespoons shortening
1 tablespoon butter
¼ teaspoon salt
1½ cups powdered sugar, sifted
1 teaspoon vanilla
Recipe
Spice Cake:
Grease a 9x13 pan. Preheat oven to 350º. Cream butter and sugar together. Sift flour with spices. Add soda and dissolve in buttermilk. (Do not do this too early as the buttermilk expands.) Alternately add the buttermilk mixture and flour mixture to creamed butter, mixing well as you go. Add pecans and raisins. Bake at 350º for 25 minutes. Serve with Penuche Frosting.
Penuche Frosting:
Combine brown sugar, milk, shortening, butter and salt in saucepan and cook for 3 minutes. Cool mixture and add powdered sugar and vanilla. Frost cake immediately.
