    3/4 c. flour
    3/4 c. sugar
    1/3 c. + 4 tbsp. unsweetened cocoa powder
    1 tsp. instant espresso powder or instant coffee powder
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. Salt
    1/2 c. low-fat milk (1%)
    1 tbsp. unsalted butter, melted
    1 1/2 tsp. vanilla extract
    1/3 c. packed light brown sugar
    1 2/3 c. boiling water

    Recipe



    Place the oven rack in the center of the oven; preheat the oven to 350 degrees. Spray a 9-inch baking pan with nonstick spray.

    Spray together the flour, sugar, 1/3 c. of cocoa, the espresso powder, baking powder, baking soda, and salt in a large bowl. Make a well in the center, and pour in the milk, butter and vanilla. Stir together until just blended and spoon evenly into the pan, spreading level.

    Stir together the brown sugar and the remaining 4 tbsp. of cocoa in a small bowl. Sprinkle evenly over the batter. Gently pour the boiling water over the top; do not stir. Bake until the top of the pudding is set, 35 minutes. Cool in the pan on a rack for at least 30 minutes. Serve warm or at room temperature.
