    1-3/4 cups plus 2 tablespoons all-purpose flour
    1-1/2 cups sugar
    1 tablespoon baking powder
    1 teaspoon salt
    1/2 cup vegetable oil
    5 eggs, separated
    3/4 cup water
    1 tablespoon grated orange rind
    3 egg whites
    1/2 teaspoon cream of tartar

    Recipe



    Sift together flour, sugar, baking powder, and salt in a large mixing bowl. Make a well in the center of dry ingredients; add oil, egg yolks, water and orange rind. Beat at medium speed of an electric mixer 2 minutes.

    Beat 8 egg whites (at room temperature) in a large mixing bowl at high speed 1 minute or until foamy. Add cream of tartar, beating until stiff peaks form (2 to 4 minutes).

    Pour egg yolk mixture in a thin, steady stream over entire surface of egg whites; gently fold whites into yolk mixture.

    Pour batter into an ungreased 10-inch tube pan, spreading evenly with a spatula.

    Bake at 350 degrees for 55 minutes or until cake springs back when lightly touched. Remove from oven; invert pan, and let cool 40 minutes. Loosen cake from sides of pan, using a narrow metal spatula; remove from pan.

    Makes one 10-inch cake
