4 egg whites
1 (11oz) can mandarin oranges, reserve juice
1/2 cup buttermilk
1 box lemon cake mix
1/2 cup unsweetened applesauce
Recipe
Beat egg whites on high for one minute. Add mandarin orange juice, buttermilk, and applesauce until well blended. Add cake mix and beat for 2 minutes. Pour mix in a pan sprayed with vegetable oil spray. Arrange the oranges evenly on top of the batter. Bake at 350 degrees for 30 to 35 minutes or until done.
Hawaiian Mandarin Cake Pineapple Topping
8 ox. vanilla yogurt
1 (8 oz) can crushed pineapple with juice
1 sm. pkg. vanilla instant pudding
1 and 1/2 cup Cool Whip
Combine pineapple with juice, yogurt, and pudding mix, and beat until thickened. Fold in Cool Whip and ice the cake. Store covered in refrigerator.
