Hi-Ho Silver Cake

2 cups cake flour
2 1/2 tsp. Baking Powder
3/4 tsp. salt
1/2 cup shortening
1 1/4 cups sugar
7/8 cups milk
1 Tbsp. vanilla
3 egg whites
Recipe
1. Sift flour once, measure and add baking powder and salt.
2. Sift together 3 times.
3. Cream shortening, add one cup of sugar gradually and cream together until light.
4. Add flour a little at a time, beating after each addition until smooth.
5. Add vanilla.
6. Beat egg whites until foamy, add remaining 1/4 cup sugar gradually and beat well until mixture will hold up in soft peaks.
7. Beat thoroughly into batter.
8. Bake in 2 deep or 3 shallow greased and floured cake pans. Can also use one 9" X 13" pan.
9. Bake at 350° (30 to 35 minutes for round pans, and 35 to 40 minutes for 9" X 13" pan.)
Good with chocolate or orange icing.
