List of Ingredients
Topping (this goes into the pan first)
1/3 c. butter
3/4 c. maple syrup
1/2 c. walnut halves (I prefer whole pecans instead and may add a few more than 1/2c.)
The butter and maple syrup is heated together in a 9" x 9" pan in the oven. Take it out of the oven and gently stir the 2 ingredients together and let is sit until the batter is ready. The nuts will go into this mixture just before the rest of the ingredients are poured over it.
Cake ingredients:
1 1/3 c. all purpose or whole wheat flour
1 c. brown sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
2/3 c. milk
1 tsp. vanilla
1 egg
1/3 c. butter
Mix brown sugar with the butter, add the beaten egg, milk and vanilla. Mix the dry ingredients (flour, baking powder, salt and cinnamon) and alternate the dry ingredients with the creamed mixture. Put the nuts in the butter and maple syrup mixture and then add the cake mixture by spooning the batter onto the topping in the pan.
Preheat the oven to 350 0F and bake for 45 minutes.
Remove the cake from the oven and invert the pan on a serving platter immediately and let sit for 5 minutes.
Remove the pan.
Serve warm with whipping cream. (Or icecream or dream whip.)
