    Makes One, 9 inch Cake

    1 Cup Milk
    1 Pkg. Active Dry Yeast-(1/4 oz.)
    2 Eggs
    5 Tbsp. Butter-softened
    ½ Cup Brown Sugar
    3 Cups All Purpose Flour
    ½ tsp. Ground Nutmeg
    ½ tsp. Salt
    ¾ Cup Raisins
    ½ Cup Powdered Sugar
    4 Tbsp. Brandy

    Recipe



    Heat the milk until barely warm. Remove from the heat, add the yeast, stir to dissolve. Whisk in the egg until smooth.
    In a separate bowl, cream together the softened butter and brown sugar using an electric mixer. Gradually add the warm milk mixture while whipping until smooth.
    Sift together the flour, nutmeg and salt. Add to the butter mixture, and stir until smooth. Add raisins, stir in. Cover this bowl and let rise in a warm place until doubled in size. Transfer the mixture into a greased 9 inch cake pan and let rise again for about 20 minutes.
    Meanwhile, prepare the glaze by combining the powdered sugar and brandy, stir until smooth. If glaze is too runny, add more sugar. If glaze is too thick, add more brandy. Reserve.
    Bake in a 350 degree oven for about 45 minutes, or until a toothpick inserted into the center comes out clean. Let cool 10 minutes, unmold from pan. Drizzle with the icing, slice and serve.
