    Source of Recipe

    Internet

    List of Ingredients

    1 cup old fashioned oats
    1 1/4 cups Guinness Stout
    1/2 cup butter, room temperature
1 cup packed dark brown sugar
    1 cup granulated sugar
    2 large eggs, room temperature
    1/2 teaspoon vanilla
    2 teaspoons grated orange peel
1 1/2 cups all purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg

    Oat Topping
    1/4 cup butter, room temperature
    1/2 cup packed brown sugar
    1/4 cup sweetened condensed milk
    1/2 cup old fashioned oats
1/2 cup toasted pecans or walnuts, coarsely chopped

    Recipe

Soak the oatmeal and stout for two hours in a glass bowl; cover with plastic and chill.

Preheat oven to 350 F. Grease a 9-inch springform pan or other cake pan with 3-inch sides.

In a mixer, cream butter and sugars until somewhat fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and orange zest.

Drain chilled oats and reserve the stout. In another bowl, sift the flour, baking soda, salt, cinnamon and nutmeg. Add flour mixture to creamed butter mixture in three additions, alternating with the stout in two additions, beginning and ending with dry ingredients. Do not overmix. Fold in oats and scrape batter into pan. Bake 55-65 minutes or until center of cake springs back and skewer comes out clean. Cool completely on wire rack.

Mix together the topping ingredients with your finger and top the cooled cake. Put under broiler quickly until lightly browned and bubbly. Cool again and serve.
