Peaches and Praline Cake

MAKES ONE 9-INCH CAKE
List of Ingredients
1/2 cup chopped pecans
I package (8 ounces) cream cheese, softened
I cup packed brown sugar
4 eggs, beaten
1/2 cup half-and-half
I teaspoon vanilla
I cup gingersnap crumbs
I (6-ounce) package almond brickle chips
1/2 cup flaked coconut
I (16-ounce) can sliced peaches, well drained and chopped
I cup whipping cream, whipped, additional peach slices and fresh
mint leaves for garnish
Recipe
1. Preheat oven to 350°F. Grease 9-inch square baking pan.
2. Place pecans in shallow baking pan. Bake 10 to 12 minutes or until lightly toasted, stirring occasionally. Remove from oven; leave oven on for cake. Set pecans aside to cool.
3. Beat together cream cheese and sugar in large bowl until well blended.
4. Add eggs, one at a time, beating well after each addition. Blend in half-and-half and vanilla. Stir in pecans, crumbs, chips and coconut.
5. Stir peaches into cream cheese mixture; pour into prepared pan.
6. Bake 35 to 40 minutes or until center is firm and edges are golden brown. Serve warm or chilled. Garnish, if desired.
