    1 1/2 cups sifted cake flour
    1 teaspoon baking powder
    6 eggs, separated
    1/4 teaspoon salt
    1 1/2 cups sugar
    1/2 cup pineapple juice (or orange juice)
    1 tablespoon lemon juice

    Recipe



    Sift flour and baking powder together 4 times. Beat egg whites and salt until stiff but not dry. Add 3/4 cup sugar, about 2 tablespoons at a time, beating well after each addition. In a separate bowl beat egg yolks, add remaining sugar, and fruit juices, and beat until thick enough to hold a soft peak. Fold flour, about 1/4 of it at a time, into yolk mixture, folding just enough to moisten flour. Fold in egg white mixture. Pour into ungreased tube pan. Cut through batter with spatula to remove large air bubbles. Bake at 325 degrees for 50 - 60 minutes. Invert pan and let cake cool in pan. Makes 1 9-inch cake.
