Pumpkin Chip Cookies

List of Ingredients
1-1/2 C. butter, softened
2 C. packed brown sugar
1 C. sugar
1 can (15-oz.) solid pack pumpkin (Or from the garden)
1 egg
1 tsp. vanilla extract
4 C. all-purpose flour
2 C. quick-cooking oats
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
2 C. (12-oz.) semisweet chocolate chips
Recipe
In a large mixing bowl, cream butter and sugars. Beat in the pumpkin, egg and vanilla.
Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in chocolate chips.
Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets.
Bake at 350* for 10-12 minutes or until lightly browned.
Remove to wire rack to cool.
Yield: 10 dozen
