    Rhubarb Marshmallow Cake

    3-cups sliced rhubarb
    ¾-cup sugar
    1 ½-cups miniature marshmallows
    ½-cup soft butter
    1-cup sugar
    2-eggs
    1 ¾-cups flour
    3-tsp baking powder
    ½ tsp-salt
    ¼-cup milk
    1-tsp vanilla

    Recipe



    Spread rhubarb on bottom of a 9” square pan or 9x13 if not wanted as high
    Sprinkle with ¾ cup of sugar first, then marshmallows on top
    Cream butter and sugar until fluffy
    Add eggs one at a time
    Sift flour, baking powder and salt together
    Add to creamed mixture alternately with milk and vanilla
    Batter will be thick
    Drop by small spoonfuls on rhubarb mixture and spread evenly as possible
    Bake at 350* for 35 minutes to 1 hour until rhubarb is soft and cake springs back
    Let stand 5 minutes and invert on plate
    Serve warm with whipped cream or ice cream
