    Sunday Dinner Lemon Stack Cake

    1/2 cup shortening
    1 cup sugar
    2 eggs, well beaten
    1 1/2 cups cake flour
    1/2 tsp. salt
    1 tsp. lemon extract
    1/2 cup milk
    Lemon filling

    Lemon Filling:
    4 T. cornstarch
    1/2 cup cold water
    1/4 tsp. salt
    1 egg, slightly beaten
    3/4 cup sugar
    1 1/2 cups boiling water
    Grated rind and juice of 1 lemon

    Cream shortening. Gradually work in sugar. Add beaten eggs and beat until mixture is well blended. Sift dry ingredients together and add alternately with milk to the first mixture. Add extract and beat to blend the mixture. Pour into two well-greased cake pans. Bake at 375 degrees for 20 minutes or until done. Stack with lemon filling (recipe below) and dust with powdered sugar.

    Lemon Filling:
    Mix cornstarch and water to form a paste. Combine next 5 ingredients. Stir in boiling water. Cook and stir until thick, like jelly. Spread between cake layers and on top.
