1 large package cream cheese (softened)
1/3 cup sugar
1 egg
1 teaspoon vanilla
1/4 teaspoon almond extract
12 vanilla wafers
any type of pie filling



Recipe



Beat the cream cheese and sugar and egg and beat well. Add
vanilla and almond extract and mix well.
Put the wafer in the bottom of a muffin paper in a muffin tin.
Spoon cream cheese mixture on top. Bake in a 350 degree oven
for about 25 minutes. I put the topping on the cheese cake when
they are baked. I like a spoonful of lemon pie filling and a small
dollop of cool whip. I have also mixed in a 1/3 cup of pumpkin pie
filling in the cream cheese mixture and used a ginger snap cookie
for the vanilla wafer.
