Triple Ginger Pear Pie

Thaw one deep-dish pie shell. Mix 1/2 cup sugar, 1 tablespoon minced candied ginger, 1/2 teaspoon grated fresh ginger root, 1/4 teaspoon ground ginger, 1/4 cup all purpose flour, 3 pounds canned pears (drained). Put filling in a frozen pie shell. Use thawed shell as top. Bake 400 degrees for 45 minutes, cover loosely with foil and bake another 30 minutes, bake uncovered for up to 5 minutes to brown.
Variations:
Glazing: Mix an egg white and some sugar and brush on top before baking to give it a golden shine.
Flavor to Taste: I use more of each of the ginger than mentioned because I LOVE ginger! Actually, I don't even measure the ginger! And I use a little less sugar.
Portions: The recipe makes one deep-dish pie or two regular pies. If you make regular pies, you might have to reduce your baking time.
