2-1/4 cups sifted cake flour
1-1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup salad oil
3/4 cup egg yolks (about 8)
1 teaspoon grated orange peel OR 2 teaspoons grated lemon peel
3/4 cup orange juice
1 cup egg whites (about 8)
1/2 teaspoon cream of tartar
1-1/3 cups flaked coconut
Frosting or whipped cream
Recipe
Sift flour, sugar, baking powder and salt together into bowl. Make a well in center. Add in order: oil, egg yolks, peel and juice. Beat until satin smooth.
Beat egg whites with cream of tartar to very stiff peaks. Pour batter in thin stream evenly over entire surface of egg whites; fold in gently. Fold in coconut.
Bake in ungreased 10-inch tube pan at 325 degrees about 55 minutes. Invert pan; cool. Frost with a fluffy frosting or whipped cream.
