Zucchini Fruit Cocktail Cake

3 eggs
2 cups sugar
1 cup vegetable oil
2 tsp. Vanilla
2 cups shredded zucchini
1 can fruit cocktail, drained
3 cups of flour
2 tsp. Baking soda
1 1/2 tsp. Cinnamon
1 tsp. Salt
3/4 tsp. Nutmeg
1 cup chopped nuts
Recipe
Mix in order given. Grease and flour 2 loaf pans. Pour batter in loaf pans. Bake at 325 degrees for one hour, but check after 50 minutes, or until toothpick comes out clean.
Note: If you had a few ripe bananas, you could mash them and put them in the batter.
This is good with cream cheese on it. Freezes well. Freeze after cooked and cooled, and wrapped well in saran wrap.
