    5th Avenue Chocolate Eclair Cake

    preheat oven to 350°

    Pie Shell
    1c. water
    1 stick butter

    Bring to a rolling boil. While still on the heat, add 1c. flour, stir in and remove from the heat. Add 4 eggs, one at a time, beating with electric mixer between each one. Spoon the dough onto a pizza pan in a doughnut shape. Bake on 350° for 30 minutes or until golden brown. while still hot, cut the shell into 2 pieces, making a top and bottom. remove the top and place face down on sheet on aluminum foil. let both sides cool completely.

    Filling
    2 pkgs. instant vanilla pudding mix
    2c. cold milk

    Beat with electric mixer 3 minutes add 1 1/2c. cool whip to pudding, folding together. When shell is completely cool, add the pudding to the bottom of the pie shell. Replace the top as much on the same spots as before it was cut, Don't worry if it doesn't match completely, you will never be able to tell when the frosting is on.

    Chocolate frosting
    2 Tbls. butter
    2 Tbls. milk
    2 envelopes choco-bake premelted chocolate
    1 Tbls. vanilla
    1c. powdered sugar (or to taste, should be drizzling consistency)

    Melt first four ingredients on medium heat in sauce pan. Use wire whisk to blend, when smooth, add powdered sugar. Whisk together until smooth. Drizzle the chocolate over the pie shell, going from the middle to the edge and repeat all the way around the cake.
