Apple-Honey Custard Pie

1 9" pie shell, unbaked
2 cups peeled and sliced apples (tart varieties work best)
4 large eggs
3/4 cup honey
1 cup yogurt
1 tsp. vanilla
2 tsp. cinnamon
3 tsp. salt
Recipe
Spread apple slices evenly over pie shell. Combine remaining ingredients in the blender and run at high speed for several seconds. Pour custard over apples. Sprinkle on some nuts ( walnuts or almonds recommended), if desired. Bake for 45 minutes at 375 degrees, or until solid when jiggled. Cool at least to room temperature before cutting.
Options: Replace apples with blueberries, sliced fresh peaches, or pitted, halved fresh black cherries. Replace honey with maple syrup.
