    CAKE

    3 cups all-purpose flour, sifted
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon each nutmeg and cinnamon
    1-1/2 cups vegetable oil
    2 cups sugar
    3 eggs
    2 teaspoons vanilla
    2 cups finely chopped apples
    1 cup chopped nuts
    2 tablespoons rum, more if desired
    1/2 cup raisins

    TOPPING 1

    1/2 cup sugar
    1/2 cup butter
    1/4 cup rum

    TOPPING 2

    1/2 cup sugar
    2 tablespoons cinnamon

    CAKE: Combine flour, baking soda, salt, cinnamon and nutmeg; set aside.

    In large bowl at medium speed, beat together oil, sugar, eggs, and vanilla. Mix until thoroughly combined. Gradually beat in flour mixture until smooth. (Batter will be very thick.). Add rum; fold in apples, raisins and pecans.

    Turn into greased and floured Bundt pan. Bake at 350 degrees for 1 hour and 30 minutes. Remove cake from Bundt pan after 5 minutes.

    TOPPING 1: Mix in saucepan sugar, butter, and rum. Heat until sugar melts and spoon mixture over warm cake.

    TOPPING 2 While cake is still warm combine sugar and cinnamon until well mixed. Spread all over cake.
