    1/2 cup EXTRA VIRGIN OLIVE OIL
    1 cup granulated sugar
    1/2 cup dark brown sugar
    2 eggs
    3/4 cup grated apples
    1 1/4 cups grated carrots
    1 1/4 cups all-purpose flour
    1/2 tsp. salt
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1/2 cup dried cranberries
    1/2 cup sliced almonds (optional)

    Recipe



    1. Preheat oven to 350 degrees.

    2. In a medium or large mixing bowl, combine the Extra Virgin Olive Oil, the sugars and the eggs. Sitr with a wooden spoon until well combined. Add the apples and carrots, continuing to stir until well combined.

    3. Put the flour, salt, baking soda, cinnamon and ginger together in a sifter. Sift into the apple/carrot mixture, stirring until well combined. Then add the cranberries and almonds. Stir well.

    4. Pour into a 9x9 inch greased baking pan. Bake at 350 degrees for 40-45 minutes, or until top of cake springs back when lighlty pressed. Set aside on wire rack. Cool for 30 minutes.

    5. In a medium bowl, combine the cream cheese, margerine and vanilla. Beat with an electric mixer on medium speed until light and fluffy. Gradually add the powdered sugar, beating until well combined. 6. Spread evenly over the cake. Cool for 1 hour before serving.

    Makes 8 servings.
