Banana Coffee Cake with Orange Glaze

3 cups all-purpose flour
2 tsp. baking powder
¾ tsp. baking soda
½ tsp. salt
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
3 beaten eggs
2 cups mashed banana (5-6 medium bananas)
1½ cups sugar
¾ cup cooking oil
1½ tsp. finely shredded lemon peel (optional)
½ cup chopped walnuts
Orange Glaze (see recipe below)
Dried apricot halves

Lightly grease a 10-inch fluted tube pan; set aside. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center of the dry mixture; set aside.
In another large bowl combine eggs, banana, sugar, oil, and, if desired, lemon peel. Add egg mixture all at once to dry mixture. Stir just until moistened (batter should be lumpy). Fold in nuts.
Spoon batter into prepared pan. Bake in 350° oven for 45 to 50 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight. To serve, drizzle with Orange Glaze and top with dried apricot halves. Makes 16 servings.
Orange Glaze: In a small bowl stir together 1½ cups sifted powdered sugar and 2 tablespoons orange juice. Add enough orange juice, 1 teaspoon at a time, to make glaze of drizzling consistency.
