    1/2 cup shortening
    1 cup sugar
    2 cups flour
    2 eggs, lightly beaten
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon vanilla or banana flavoring
    1 cup mashed ripe bananas
    1 cup light rum
    1/2 cup chopped pecans

    Recipe



    Cream shortening and sugar well. Add eggs, one at a time, beating well after each addition.

    Mix flour, baking powder, and baking soda together and sift several times.

    Add dry ingredients to creamed mixture alternately with rum. Stir in flavoring, bananas, and pecans.

    Bake at 350 degrees until done, about 45 minutes in a floured and greased tube pan.

    RUM FROSTING

    1/3 cup softened butter
    3 cups powdered sugar
    Rum

    Mix well until smooth; adding enough rum to spreading consistency. Sprinkle with chopped nuts.
