    Crust:
    1/4 cup macadamia nuts
    1 cup graham cracker crumbs
    1/4 cup butter
    1/4 cup sugar

    Pie:
    1 egg yolk
    1/4 tsp. salt
    1/2 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    5 1/2 cups apple
    3/4 cup all-purpose flour
    1/4 cup sugar
    1 Tbs. lemon juice
    1/4 cup light brown sugar
    1/2 cup sugar
    1/3 cup butter
    1/4 cup light brown sugar
    3 Tbs. all-purpose flour

    Hot caramel sauce

    Crust:
    Finely chop the macadamia nuts. Combine macadamia nuts, graham cracker crumbs, butter and sugar, blend well. Press into 9-inch pie plate. (Chill if not using right away, or if using for a cold pie.)

    Pie:
    Preheat oven to 375º.

    Brush bottom and sides of crust evenly with egg yolk; bake on baking sheet until light brown,about 5 minutes. Remove crust from oven.

    Combine sliced apples, lemon juice, 1/2 cup sugar, 1/4 cup brown sugar, 3 Tbs. flour,salt,cinnamon and nutmeg. Mix well and spoon into crust.

    Mix remaining flour, sugar, brown sugar and butter with fork or pastry blender until crumbly. Sprinkle topping mixture evenly over apples. Bake on baking sheet,about 50 minutes. Cool on wire rack. Serve warm with vanilla ice cream and hot caramel sauce.

    Caramel Sauce
    1 cup butter
    2 cups sugar
    2 tsp. fresh lemon juice
    1 1/2 cups whipping cream

    Melt butter in a heavy saucepan over medium heat; add sugar and lemon juice, and cook, stirring constantly, 6 to 8 minutes or until mixture turns a deep caramel color. Gradually add cream, and cook, stirring constantly, 1 to 2 minutes or until smooth. Remove from heat, and cool. Pour into hot sterilized jars, and seal. Store in refrigerator up to 1 month.
