    2 1/4 cups sifted cake flour, or 2 cups sifted all-purpose flour
    1 1/2 cups sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 cup Buttermilk Blend
    1 teaspoon salt
    1/2 cup shortening
    1 cup water
    1 1/2 teaspoons vanilla
    2 eggs
    Fudge Frosting

    1/2 cup shortening
    2 cups sugar
    3 ounces unsweetened chocolate
    2/3 cup milk
    1/2 teaspoon salt
    3 tablespoons Buttermilk Blend
    2 teaspoons vanilla

    Have ingredients at room temperature. Preheat oven to 350 degrees F. Grease and flour a 13x9x2-inch baking pan, or 2 round layer pans, 8 or 9x1 1/2 inches. Sift all dry ingredients together into large mixing bowl. Add remaining ingredients and blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally. Pour into pan(s).

    Bake oblong pan 40-45 minutes, layer pans 30-35 minutes or until wooden toothpick, inserted in center, comes out clean. Cool. Frost as desired or with Fudge Frosting.

    Fudge Frosting:
    Mix all ingredients, except vanilla, in 2 1/2-quart saucepan. Heat to rolling boil, stirring occasionally. Boil 1 minute without stirring. Place pan of frosting in bowl of ice and water. Beat frosting until smooth and of spreading consistency. Stir in vanilla. Makes enough to fill and frost two 9-inch layers or one 13x9-inch cake.
