    Chocolate Chambord Mousse Torte

    1 lb 4oz of Bitter Sweet Chocolate
    2 Sheets of Gelatin
    2 oz of Raspberry Jam
    1 Cup of Chambord Liquor
    6 Each fresh Egg Yolks
    2 Pints of Heavy Cream
    6 Each of fresh Egg Whites
    4 1/2 oz of Granulated Sugar

    Recipe



    Melt the chocolate to about 98*

    Soften the gelatin sheets in with the Chambord and Jam, then heat to about 98*

    Whip the Yolks.

    Whip the Egg Whites and slowly add the sugar.

    ASSEMBLY

    Add the heated gelatin mixture to the chocolate.
    Add the chocolate/gelatin mixture to the egg yolks

    Add the whipped egg whites to the whipped heavy cream then add that to the chocolate/gelatin/yolk mixture.

    OPTIONS

    You may fill any type of dish with this mousse, and decorated the top with fresh fruit, or you can make it in a mold of any shape then freeze it, once frozen, remove it from the mold and decorate as desired.
