Cocoa Butter Frosted Choco Chip Cake

2 cups plus 2 Tbs sifted unbleached flour
1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup softened shortening
1 cup milk
1 teaspoon vanilla
4 egg whites
1/2 cup finely chopped chocolate chips
Cocoa Butter Frosting
1/2 cup softened butter
1/2 cup cocoa
3 cups sifted confectioners sugar
1 teaspoon vanilla
3 to 4 tablespoons evaporated milk Recipe
Preheat oven to 350 degrees F. Sift dry ingredients into bowl. Add shortening, milk and vanilla; beat 2 minutes. Scrape bowl down. Add egg whites; beat 2 minutes, scraping bowl frequently. Fold in chocolate chips. Pour into two well-greased and floured 8-inch layer pans (or one 13x9x2-inch baking pan). Bake 35-40 minutes for layers; 40-45 minutes for rectangle. Remove from oven; cool and frost with Cocoa Butter Frosting. Yield: 12 Servings
Cocoa Butter Frosting:
Cream butter, cocoa and confectioners sugar gradually with vanilla and evaporated milk until smooth and thick.
