Cocoa Fudge Cake

1 2/3 cups all-purpose flour
1 1/2 cups sugar
2/3 cup baking cocoa
1 1/2 teaspoons baking soda
1 teaspoon salt
6 tablespoons Buttermilk Blend
1 1/2 cups water
1/2 cup shortening
2 eggs
1 teaspoon vanilla
Fudge Frosting
1/2 cup shortening
2 cups sugar
3 ounces unsweetened chocolate
2/3 cup milk
1/2 teaspoon salt
3 tablespoons Buttermilk Blend
2 teaspoons vanilla Recipe
Have ingredients at room temperature. Preheat oven to 350 degrees F. Grease and flour a 13x9x2-inch baking pan, or two 8- or 9-inch layer pans. Sift together dry ingredients in large mixing bowl. Add remaining ingredients. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally. Pour into pan(s). Bake oblong pan 35-40 minutes, layer pans 30-35 minutes, or until wooden toothpick, inserted in center, comes out clean. Cool. This recipe will also make 24 cupcakes. Frost as desired or with Fudge Frosting.
Yield: 12 Servings
Fudge Frosting:
Mix all ingredients, except vanilla, in 2-quart saucepan. Heat to rolling boil, stirring occasionally. Boil 1 minute without stirring. Place pan of frosting in bowl of ice and water. Beat frosting until smooth and correct spreading consistency. Stir in vanilla. Makes enough to fill and frost two 9-inch layers or one 13x9x2-inch cake.
