    2 1/2 cups dried cranberries
    3/4 cup EXTRA VIRGIN OLIVE OIL
    2 cups granulated sugar
    3 eggs, slightly beaten
    21/2 cups applesauce
    4 cups flour
    4 tsp. baking soda
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1 tsp. ground cloves
    3/4 tsp. salt
    1 cup chopped pecans

    ICING
    1 package cream cheese (3oz.) softened
    3/4 cup confectioners' sugar
    1 Tbsp. fresh orange juice
    1 tsp. grated orange peel
    1/4 cup table cream

    Recipe



    1. Heat oven to 325 degrees. Spray a 10-cup tube or Bundt pan with olive oil spray and lightly dust with flour.

    2. Put dried cranberries into small bowl. Cover with boiling water and let sit for 10 minutes.

    3. In large mixing bowl, beat together olive oil and sugar. Add eggs one at a time and continue to beat. Stir in applesauce. Combine flour with spices and salt and gradually add to mixture, while beating.

    4. Drain Cranberries and combine with pecans. Stir into batter.

    5. Turn into prepared pan and bake at 325 degrees for 1 1/2 hours. Cool for 15 minutes in pan, then turn out to cool completely.

    6. Prepare icing by beating cream cheese with sugar, orange juice, and orange peel. Add just enough table cream to create thick but pourable icing. Drizzle over cooled cake.

    Serves 6
