Dark Frosted Chocolate Carrot Cake

2 cups cake flour
2 cups granulated sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground mace
pinch ground nutmeg
1 cup butter softened
4 eggs
1 tablespoon pure vanilla extract
3 cups shredded carrots
4 semisweet chocolate squares, cut into small pieces
1 cup finely chopped walnuts
Dark Chocolate Frosting
4 semisweet chocolate squares
2 tablespoons light corn syrup
1 teaspoon pure vanilla extract
dash pure almond extract
pinch ground cinnamon
1 cup confectioners' sugar
2 tablespoons hot water Recipe
Preheat oven to 350 degrees F. Lightly grease and flour 13x9x2-inch baking pan. Sift flour, granulated sugar, cocoa, baking powder, cinnamon, mace and nutmeg into bowl. Place butter or margarine in large mixing bowl and cream with electric mixer until fluffy. Add eggs and vanilla and beat until light and creamy. Add dry ingredients and carrots. Beat at medium speed 2 minutes. Stir in chocolate pieces and walnuts. Pour into prepared pan. Bake 40-45 minutes.
Dark Chocolate Frosting:
Melt chocolate in top of double boiler over (not in) simmering water. Add corn syrup, vanilla, almond extract and cinnamon and mix well with spoon. Stir in confectioners sugar. Add hot water gradually, mixing until smooth. Frost cake in pan while cake is still hot.
