    3 whole Eggs, slightly beaten
    2 cups Granulated Sugar
    2 tsp. Vanilla Extract
    1 cup Vegetable Oil
    3 cups All-purpose Flour
    1 tsp. Baking Soda
    1 tsp. Salt
    1 tsp. Cinnamon
    3 cups Apples; peeled, cored, and chopped
    1 small can of Coconut
    1 cup Raisins
    1 cup Walnuts, chopped

    Recipe



    Pre-heat oven to 350-F degrees. Lightly grease and flour a tube pan, reserve.

    In a large mixing bowl combine the eggs and sugar until creamy. Add vanilla extract and vegetable oil and blend again. Sift together flour, baking soda, salt, and cinnamon. Add the dry ingredients to the egg mixture and combine thoroughly to form a creamy white batter.

    Fold in apples, coconut, raisins, and walnuts. Pour the cake batter into the prepared tube pan and shake gently to remove any air pockets.

    Bake for 70 minutes or until a cake-tester is cleanly removed from the center of both sides of the cake. Cool for about 5 minutes, then invert the tube pan over a wire rack and let the cake stand to cool. Serve warm. Store any remaining cake in an airtight container for up to a week. -
