    2 lb lowfat cottage cheese
    1 lb lowfat cream cheese
    1 pt. sour cream
    1 1/2 cup sugar
    8 eggs
    Lemon juice (1 lemon)
    1 tsp lemon extract
    6 tablespoons of cornstarch
    6 tablespoons of flour
    1/2 lb melted butter

    In the food processor beat the cottage cheese until smoth. Set aside. In a large mixing bowl beat cheese, sugar, and eggs. Mix well. Add lemon juice and extracts. Set all of this aside. Add the smooth cottage cheese a little at a time and continue to beat. In a small bowl, mix together the flour and cornstarch. Sprinkle over mixture and blend once again. The next ingredient is th melted butter; mix again. Lastly, FOLD in the sour cream. Pour into a greased spring form pan and bake at 325 degrees for 1 hour and 45 minutes.Check with a knife to see if it is dry in the center or cracked.
