Maid O'Mist Orange Cake

2 cups sifted cake flour
1 1/3 cups sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 teaspoon grated orange rind
1/4 teaspoon grated lemon rind
2/3 cup solid vegetable shortening
1/3 cup orange juice
1/3 cup water
2 eggs, unbeaten
2 tablespoons lemon juice
Buttercream frosting (or your favorite)

Preheat oven to 375 degrees.
In large bowl, sift together flour, sugar, baking powder, baking soda and salt. Add grated rinds. Work in shortening. Combine orange juice and water and add to mixture. Beat 200 strokes (about 2 minutes by hand or with a mixer at low speed). Scrape down bowl and add eggs. Beat another 200 strokes. Add lemon juice and blend. Pour into two greased 91/2-inch cake pans that are at least 11/2 inches high.
Bake in preheated oven 22 to 30 minutes. When done, remove from oven and cool about 10 minutes in pans. Turn out onto wire racks to cool completely.
Prepare buttercream and frost cake between layers and on top and sides. Makes 12 to 16 servings.
