    Crust and Filling:
    1 (9-inch) graham cracker pie crust
    2 egg yolks
    1 (14-ounce) can sweetened condensed milk
    1 egg white
    1/2 cup Key lime juice

    Recipe



    Bake pie crust at 350 degrees for 5 minutes. Beat egg yolks with an electric mixer 2 minutes. Blend yolks into milk. In separate bowl, beat egg white with electric mixer until fluffy. Gently fold whites into mixture. Fold in lime juice. Pour filling into pie crust.

    Refrigerate 2-3 hours before adding topping.

    Topping:
    5 egg whites
    2 teaspoons cream of tartar
    1/2 cup of sugar

    Whip egg whites and cream of tartar with electric mixture until foamy. Continue to whip while slowly adding sugar. Beat until peaks form. Score filling with a fork. Spread Topping over Filling. Bake at 425 degrees for 5 minutes or until topping starts to brown.

    Yields 8 servings.
