1 c. sugar
1 c. butter (margarine)
3 eggs
1 c. jam (strawberry or
blackberry)
2 c. flour
1 tsp. soda
1 c. raisins
1 c. buttermilk
1 tsp. cinnamon
1 tsp. allspice
1 c. nuts
Recipe
Sift together flour, soda, cinnamon and allspice.
Cream sugar, butter and eggs. Add jam. Mix in flour, soda mixture.
Add buttermilk and mix to smooth texture. Add in raisins and. Best as three layered cake. Bake in preheated oven at 350 degrees until cake springs back when touched, about 30 minutes.
Icing For Jam Cake:
3 c. brown sugar
1 1/2 sticks real butter
1 c. cream (Carnation works
fine)
1 tsp. vanilla
date halves
Mix ingredients and slowly boil, stirring often, until soft ball forms. Take off heat. Place pan in cold water and beat. Put icing between layers and beat a little longer. Cover cake with firmer icing and decorate top with
dates. Place in sealed container and wait about 2 or 3 weeks to demolish.
