1 cup sugar
4 eggs
2 teaspoons vanilla
1/2 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 cup chopped walnuts
1 pound chopped dates
4 bananas
2 oranges
1/3 cup sugar
Topping:
1 can (20 ounces) crushed pineapple
12 ounces Cool Whip
Recipe
Heat oven to 350 degrees. Grease and flour an 11x16-inch jellyroll pan. Put the sugar, eggs, vanilla, flour, baking powder, salt, walnuts and dates into a medium size mixing bowl and blend for two minutes. Place batter into pan and bake for 12 minutes or until top is slightly brown. Remove from the oven and let cool. When cool, break the cake up into pieces and place in a mound on a large platter. In a medium bowl, slice the bananas and cup up the oranges into bite size pieces. Add the sugar. Let set until sugar is dissolved, about 5 to 10 minutes. Place half fruit mixture on top of the mound of cake and place on top of the fruit. Place the remaining fruit on top of the previous mound. To make topping, spoon the drained pineapple on top of the fruit mound. Frost the mound with Cool Whip, making sure it is completely covered. Place in the refrigerator until ready to eat.
