    No Guilt Turtle Cheesecake

    36 Nilla Chocolate wafers (reduced fat) crushed until fine.
    I crush them in a ziploc bag.
    1/2 stick I Can't Believe It's Not Butter (softened)
    2 packages (8oz.) Philadelphia Neufchatel cheese (softened)
    6 packages Splenda sweetener
    2 eggs slightly beaten (or 1/2 Cup egg beaters)
    1 package (small) sugar free Butterscotch pudding
    1 3/4 Cup skim milk
    1/3 Cup mini Chocolate Chips
    1/3 Cup chopped Pecans

    Recipe



    Mix wafers and margarine together, then press into bottom
    of an 11" x 7" pan.
    Cream sweetener with cheese.
    Add eggs and beat until smooth.
    Pour over crust and bake at 350 degrees for 20-25 minutes or until just
    set. Cool on wire rack.
    Prepare pudding following package directions using 1 3/4 Cup skim milk.
    Pour pudding over cheesecake, sprinkle chocolate chips and pecans on
    top. Cover with plastic wrap and refrigerate for 3 hours. Optional:
    Top with Chocolate Redi-Whip light when serving.

    Serves 12.

    Variations: Substitute chocolate or vanilla sugar free pudding and
    top with plain Redi-Whip or Cool Whip, light of course. Try other types of chips or nuts or just leave them off.
